Do these words change with gender? I mean, since I'm female, would I say, for example, "Я канадец", or would I modify the ending?

If you were to say I'm Canadian, you would say Я канадка, if you were a Canadian man you would say - Я канадец. We're Canadian - Мы канадцы

So yeah they change with gendersmilies/smiley.gif You can find more in lesson 'How to speak Russian in 30 lessons' - Lesson 4
